Dodo (fried plantain) and eggs: this meal is easy and quick to make. You could make this meal in 15-20 minutes. And the good thing is, it is a highly nutritious and healthy meal. This energetic meal contains iron, proteins.
· Ripe plantains
· 3 whole eggs
· 1 small Fresh tomatoes (chopped)
· 1 small onions(diced)
· 1/8 teaspoon thyme
· 1 litre vegetable oil for deep frying

Steps to Prepare your Fried plantain and eggs
First peel and wash your ripe plantain. Slice the ripe plantain in thin layers, however shape you want. After that is done, you could choose to add a pinch of salt and mix properly. Fry in hot oil and stir occasionally so it doesn’t burn and get ruined. Remember to fry on medium or low heat.
Break your eggs in a bowl and season with a pinch salt, pepper, onion and a small amount of seasoning cubes to your taste. Whisk properly to mix everything together.
Add a little amount of vegetable oil in a pan on low heat and pour in your egg mix and fry.

Pour the pasta in a pot of salted boiling water for ten to fifteen minutes
Put it in a sieve to drain and set aside
In a pot, pour in your vegetable oil on medium heat.
Add your sliced onions and stir for 2 minutes
Add tomatoes paste and stir together
Add seasoning cubes, salt, a little bit of pepper and sausage.
Add a cup of water, cover and allow to boil.
After a few minutes add your pasta into your steaming sauce and stir together.
Reduce the heat to low and cover your pot.
Check if your pasta is soft enough and the liquid is dried up, but still a little juicy.

Pancakes: Pancakes hmmm, yummy! Homemade pancakes with syrup or honey spread on top can make your kids all jiggly excited about breakfast. Pancakes can be served with just anything, mixed veggies, eggs, syrup, honey, sausages, berries… the list is endless.

How to prepare Pancakes
In a bowl, add flour, sugar, baking powder and salt, and then mix together
After that, break the fresh eggs into the mixture
Then, add water and mix the pancake batter till it is smooth and without lumps
In a frying pan, add a tablespoon of oil and heat for about 1 minute on low heat
Pour a desired amount of pancake into the heated oil.
When bubbles form on top and the edges are done, flip the pancake over to fry the other side. Fry till it is golden brown.
Continue this process until the pancake batter is finished.
Serve with sausages and syrup, berries, banana, eggs etc.
